Preheat your oven to a high roasting temperature (425–450°F / 220–230°C).
Spread the Mixed Vegetables (zucchini, bell peppers, carrots, etc.) in a single layer on a baking sheet, drizzle with Olive Oil (for roasting), and season with Salt (to taste) and Black Pepper (to taste).
Roast the vegetables at high heat until they are tender and caramelized around the edges, turning once for even roasting (about 20–30 minutes, depending on size and type of vegetables).
While the vegetables roast, whisk together the Tahini (for dressing), Yogurt (plain, for dressing), minced Garlic (minced, for dressing), and Lemon Juice (for dressing); taste and adjust seasoning as needed.
Serve the roasted vegetables warm with the creamy tahini yogurt dressing drizzled on top or served alongside.
