Preheat oven to 325f.
Combine crumbs and melted butter, mix well. in a bowl until the mixture holds together.
Butter 9” springform pan lightly, then press the crumb mix into the bottom of the pan evenly. Bake for 12 minutes. Remove and set aside.
Raise oven temp to 500f.
In a large bowl, beat cream cheese until smooth, then add salt and sugar and beat until fluffy.
Add sour cream, lemon, vanilla and yolk. Beat until combined.
Add half of the whole eggs, beat to incorporate, then add the remaining half of the whole eggs, and beat again until mixed.
Butter pan lightly again if needed.
Pour the filling into the prepared crust and bake at 500f for 10 minutes, then immediately reduce the oven temperature to 200f and bake for 90 more minutes, or until the internal temperature reaches 150f.
Let cool completely before removing from the pan.
