Carne-Seca is a cured, air-dried or sun-dried style of beef found in many cuisines (often called carne-seca in Latin America) and used as a preserved, savory ingredient in stews, tacos and stir-fries. It is prized for its concentrated meaty flavor and long shelf life. Nutritionally, Carne-Seca is a very protein-dense product, providing about 39g of protein per 100 g, but it is also highly salted and relatively high in saturated fat compared with fresh lean meats. Because it is made from whole muscle meat that has been preserved, it supplies well-formed amino acids and useful micronutrients such as vitamin B12 and selenium; however, its very high sodium content means it’s best used in moderation or swapped for lower-sodium alternatives when trying to reduce salt intake.
