Pit and roughly cube the Peach until you have about 3 cups of fruit and place them in a blender.
Add 2 cups of cold Water to the blender to help the peaches puree smoothly.
Pour in 1 can of Evaporated milk and 1/3 cup of Sweetened condensed milk for creaminess and sweetness; start with less condensed milk and adjust to taste.
Add 2 tablespoons of Sour cream to give the drink a light tang and silkier texture.
Sprinkle in 1/4 teaspoon of Cinnamon to add a warm, aromatic note—reserve a little for garnish if you like.
Blend on high until completely smooth, about 45–60 seconds; taste and adjust sweetness or cinnamon as desired.
Strain the mixture through a fine mesh sieve into a pitcher for an extra-smooth texture, pressing with a spoon to extract as much liquid as possible (optional).
Chill the agua fresca for at least 30 minutes or serve immediately over ice, garnishing with a light dusting of Cinnamon or a peach slice.
