Semolina

Semolina is a coarse flour made from durum wheat, commonly used for pasta, couscous, puddings and some breads across Mediterranean, Middle Eastern and South Asian cuisines. It is prized for its slightly gritty texture and golden color and is often labeled as fine or coarse semolina depending on grind size. As a cereal flour, Semolina is mainly a starchy ingredient but also provides a notable amount of protein at 12.7g per 100g, with modest fiber content; it is not as nutrient-dense as whole-grain alternatives. Although it supplies relatively high-quality wheat protein, it is lower in micronutrients and antioxidant plant compounds than whole-grain flours, so swapping to wholemeal versions will boost fiber, vitamins and minerals if that is a dietary goal.
