Carrageenan is a hydrocolloid extracted from red seaweed and used as a thickener, stabilizer and gelling agent in dairy, plant-based milks, desserts and many processed foods. Nutritionally it behaves like an indigestible polysaccharide and is effectively a source of fiber — it contains about 100g per 100g — while contributing negligible calories, protein or fat. Although widely used in food manufacturing, some consumers avoid Carrageenan because of debated links to gut irritation in sensitive individuals; if you prefer to avoid it, common plant-based gelling agents such as agar-agar or pectin can often be used instead.
