Guar Gum is a powdered polysaccharide thickener produced by fermenting sugars with the bacterium Xanthomonas campestris; it’s widely used in gluten-free baking, sauces and dressings to provide viscosity and stabilize emulsions. It’s mainly valued for its ability to thicken at low concentrations and to improve texture in a wide range of cuisines and commercial foods. Nutritionally, Guar Gum is almost entirely soluble fiber and can contain about 75g of fiber per 100 g, though it is typically used in gram-or-fraction-of-gram amounts so a small pinch contributes little energy while noticeably increasing thickness and mouthfeel. Some trace minerals such as manganese and magnesium are present, but they aren’t a primary reason to use it. Because it is largely inert aside from its high soluble fiber content, it can help with water retention and sensation of fullness when used in foods; however, it’s usually consumed in very small amounts and functions mainly as a texturizer rather than a nutrient-dense ingredient.
