Agar-Agar

Agar-Agar is a plant-derived gelling agent made from red seaweed, commonly used in Asian and vegan cooking to set desserts, custards, jellies and to clarify broths. It is prized for forming firm gels that hold at room temperature and for being a vegan alternative to animal gelatin. Nutritionally, Agar-Agar is almost pure soluble fiber and mineral-rich: it provides 80g of fiber per 100g and is a concentrated source of calcium and magnesium.
