Starch

Starch is a fine white powder made from the endosperm of corn, commonly used as a neutral-tasting thickener in sauces, soups and desserts across many cuisines. It is almost pure starch, providing 91.3g of carbohydrates per 100g and very little protein, fiber or fat. Because it is highly refined and low in micronutrients and fiber, it contributes little to fullness or nutrient intake and is best used sparingly or replaced with higher-fiber thickeners when you want more nutritional value.
