Kewra Water is a fragrant floral distillate made from the flowers of the pandanus/kewra plant and is used widely in South Asian and Middle Eastern cooking to scent rice, desserts and drinks. It is prized for its intense perfumed aroma and is added in very small amounts to impart a floral note to both sweet and savory dishes. Nutritionally Kewra Water contributes virtually no energy or macronutrients, at just 0kcal per 100g, and is therefore used for flavor rather than nutrition. Because it is used sparingly, it does not meaningfully affect the nutrient profile of a recipe. Culinarily it’s valued for aroma more than for health effects; when used in normal culinary amounts it has negligible nutritional impact and can be treated as a low-calorie flavoring. If you have allergies or sensitivities to strong floral extracts, use cautiously and in small quantities.
