Saeujeot

Saeujeot is a traditional Korean condiment of tiny shrimp salted and fermented until intensely savory and umami-rich; it is commonly used to season kimchi, stews, dipping sauces and many other dishes. As a concentrated seasoning, it is very high in salt at 25g per 100g, but also provides a substantial amount of protein and iodine-rich trace minerals typical of shellfish.
