Sheep Natural Sausage Casing is a traditional sausage casing made from cleaned sheep intestine, commonly used in European, Middle Eastern and artisanal charcuterie to give sausages a thin, natural skin and characteristic snap. While casings are not eaten as a primary food, they do contain animal protein and small amounts of nutrients such as vitamin B12, choline and zinc; however they are typically heavily salted during processing, containing 15g of salt per 100g. Because casings are an ingredient used in small amounts, they contribute micronutrients but can also add concentrated sodium to finished sausages, so many producers and home cooks consider alternative casings (plant-based or collagen) when reducing salt or avoiding animal-derived components.
