Safflower Oil is a neutral-flavored vegetable oil pressed from the seeds of the safflower plant and used widely in cooking, dressings and high-heat applications; it’s common in Middle Eastern and South Asian cuisines and as a commercial frying and salad oil. Nutritionally, Safflower Oil is almost entirely fat, providing 100g of fat per 100g, and is a good source of vitamin E and vitamin K compared with many other oils. While it supplies heart-friendly unsaturated fats, it is particularly high in omega-6 polyunsaturated fatty acids relative to omega-3s, so it’s best used in balance with oils higher in monounsaturated fats or omega-3s rather than as the sole household oil.
