Konjac (Konnyaku) Root is a traditional Japanese ingredient made from the konjac (konnyaku) root, commonly formed into a firm jelly, blocks or noodle-like strands and used in soups, stews and as a low-calorie pasta/rice substitute. It is extremely low in energy at 7kcal per 100g and is prized for its high content of the soluble fiber glucomannan, while contributing almost no fat or digestible carbohydrates. Nutritionally it offers very little protein but can supply some calcium depending on how it’s prepared; its main appeal is as a filling, very low-calorie source of soluble fiber that can aid satiety and support digestive health.
