Achiote Paste is a richly colored spice paste used across Mexican, Central American and Caribbean cooking to add earthy, slightly peppery flavor and a deep orange-red color to marinades, rice, stews and grilled meats. It’s traditionally made from annatto seeds mixed with oil, spices and sometimes vinegar or citrus. Nutritionally, Achiote Paste is relatively concentrated in fat and sodium compared with whole herbs and spices, and it also provides notable micronutrients such as vitamin K (101µg per 100g) and manganese. Culinarily it’s prized for the annatto pigments that give a strong orange hue and some carotenoid content, but because it’s a paste made with oil and salt it’s best used in small amounts or swapped for powdered annatto or a lower‑oil homemade version when you want a lighter option.
