Enchilada Sauce

Enchilada Sauce is a Mexican-style red sauce made from tomatoes, dried or fresh chilies, spices and sometimes onions and garlic; it's commonly used to top enchiladas, casseroles and other savory dishes. As a condiment it contributes flavor with relatively low energy, and provides a small amount of fiber and protein while being used sparingly. Note that it can be noticeably salty — it contains about 1.6g of salt per 100g — so portioning matters. Nutritionally, enchilada sauce offers modest B-vitamin and trace mineral content and, thanks to its tomato and chili ingredients, supplies some antioxidant carotenoids that add color and potential oxidative protection.
