Bouquet Garni is a small bundle of aromatic herbs (classically parsley, thyme and a bay leaf) used in French and other European cuisines to flavor stocks, soups, stews and braises; the bundle is usually removed before serving. It is typically used sparingly for its concentrated flavor, rather than eaten on its own. Although used in small amounts, the herb mix is nutrient-rich when measured per 100 g — for example it contains 1643.8µg of vitamin K — and also contributes vitamin C, iron and fiber in modest amounts. Because it’s very low in fat and calories and high in plant micronutrients, it adds flavor with little energetic cost. Bouquet garni brings antioxidant compounds and carotenoids typical of fresh herbs, and its high vitamin K content supports normal blood clotting and contributes to bone health when part of a varied diet.
