Suet

Suet is the raw hard fat trimmed from around the kidneys and loins of beef, traditionally used in British puddings, suet pastry and for rendering into tallow. It is prized in cooking for its firm texture when cold and its ability to give pastries a flaky, rich finish. Nutritionally, Suet is almost entirely fat, providing about 94g of fat per 100g with very little protein or carbohydrate; it is especially high in saturated fat and is typically used sparingly rather than as a daily fat source.
