Dendê Oil is a deeply colored tropical cooking oil traditionally used in West African and Brazilian cuisines (where it's called dendê) for frying and stews; it's prized for its bright orange color and distinctive flavor. Nutritionally, Dendê Oil is almost entirely fat and is used sparingly; it is also a notable source of provitamin A with about 3500µg of vitamin A activity per 100g and supplies vitamin E antioxidants. Because it is essentially pure fat, it contributes little protein or fiber and should be used in small amounts; its carotenoids give it antioxidant properties but it is still calorie-dense and higher in saturated fat compared with many plant oils.
