Pickled Jalapeños and Carrot is a tangy, spicy condiment common in Mexican and Tex‑Mex cuisine, made from jalapeño peppers and carrots preserved in a vinegar brine. It’s used to add crunch, heat and acidity to tacos, sandwiches, salads and bowls. Nutritionally it’s very low in calories and contributes vitamins typical of carrots and peppers — notably about 430µg RAE of vitamin A per 100g — plus some fiber from the vegetables. Because it’s mainly vegetables in a pickling solution, it adds flavor with little fat and only a small amount of protein. As a flavorful garnish, it’s a good way to boost vegetable intake and add variety; just keep in mind that pickled condiments are best used in moderation as an accent rather than a main ingredient since they can concentrate salt.
