Cow Skin

Cow Skin is a common ingredient in West African cooking (often called ponmo) made from cleaned and prepared cow hide; it’s used in soups, stews and sauces for its chewy, gelatinous texture and ability to absorb flavors. Nutritionally it is a concentrated animal protein source, providing about 22g of protein per 100 g and relatively little carbohydrate. While it supplies usable protein and collagen, it offers little fiber or plant micronutrients and contains some saturated fat, so it’s usually best enjoyed as part of a balanced meal with vegetables and whole grains.
