Wheat Starch

Wheat Starch is a finely milled, refined starch extracted from wheat and is commonly used as a thickener, binder or to give a smooth texture in Asian and European cooking. It is almost pure carbohydrate with about 91.3g of carbohydrates per 100g, and contains very little protein, fiber or fat. Because it is a refined starch, it provides quick energy but is low in vitamins, minerals and fiber, so it’s best used in small amounts or swapped for whole-grain or legume flours when you want more nutrition and satiety.
