Douchi

Douchi is a traditional Chinese seasoning made from whole black soybeans that have been salted and fermented; it’s commonly used to add savory, umami depth to stir-fries, braises and sauces. It’s a concentrated ingredient that delivers plant protein and fiber and also contributes trace minerals and some healthy fats. Because it is fermented it can add complex flavor and potential microbial benefits, but it is very high in salt at 15g per 100g, so it’s typically used sparingly in cooking.
