Katsuobushi

Katsuobushi is a traditional Japanese ingredient made from smoked, fermented and dried skipjack tuna; it’s commonly shaved into thin flakes to finish dishes or simmered to make dashi broth and is prized for its strong smoky-umami character. Nutritionally it is an extremely concentrated source of protein, providing about 77g of protein per 100g, which is why it’s used sparingly as a seasoning rather than a primary protein on the plate.
