Light Corn Syrup

Light Corn Syrup is a clear, sweet syrup made from corn starch and widely used in baking, candy-making and as a sweetener in North American and some Asian cuisines. It is primarily used for texture and sweetness rather than flavor, and appears in forms such as light corn syrup or Japanese mizuame. Nutritionally it is almost purely carbohydrate — primarily simple sugars — providing about 76.8g of sugar per 100g and negligible protein, fiber or healthy fats. Because it supplies concentrated sugars with very little micronutrient or fiber content, it functions as an energy-dense sweetener best used sparingly or swapped for less-refined sweeteners when a more nutrient-containing alternative is desired.
