Jaggery

Jaggery is an unrefined sweetener made from concentrated sugarcane or palm sap and is used across South Asian, Latin American and African cuisines as a traditional sweetening and flavoring ingredient. It is energy-dense at 383kcal per 100 g and is mainly composed of simple sugars rather than protein or fiber. Compared with refined white sugar, Jaggery retains small amounts of minerals such as iron and magnesium and a few phytochemicals, but it remains a concentrated source of sugars and should be used sparingly in the diet.
