Ssamjang

Ssamjang is a thick, savory Korean dipping sauce commonly served with grilled meats and leafy wraps; it blends fermented soybean paste, chili paste, garlic, sesame and often a touch of sweetener. It contributes umami, some plant-based protein and ferment-derived flavor, but it is also relatively high in sodium — 8g per 100g — so it’s best used in small amounts. Nutritionally it provides fiber and soy protein from the fermented bean pastes and can boost the palatability of vegetables; however, because of the salt and added sugars it’s a condiment to enjoy sparingly or to replace with reduced-sodium homemade versions when possible.
