Celery Seed is the small dried seed of the celery plant, used as a warm, slightly bitter spice in European and Middle Eastern cooking and as the distinctive flavor in many pickles, dressings and spice blends. It is notably mineral-dense — for example it contains 1193.5mg of calcium per 100g — and is also a concentrated source of fiber and plant protein compared with many other spices. Because it carries concentrated flavor and plant compounds, it’s useful as a low-salt seasoning and supplies antioxidant polyphenols along with trace minerals such as iron and manganese.
