Kale

Kale is a leafy green common in European and American cooking (often seen as curly kale, lacinato or 'dinosaur' kale) and is used raw in salads, blended into smoothies, or cooked into soups and sautés. It is a nutrient-dense vegetable prized for its bright flavor and hearty texture. As a vegetable, Kale is an excellent source of vitamin C (120mg per 100g) and also provides meaningful fiber and plant protein, making it a good way to boost micronutrients and satiety without many calories. Kale also contains protective plant compounds typical of cruciferous greens — including glucosinolates and carotenoids — which contribute antioxidant and detoxifying benefits in the diet.
