Dark Soy Sauce is a dark, slightly sweetened soy-based condiment commonly used in Chinese, Southeast Asian and Malaysian cooking to add color and savory depth to stir-fries, marinades and dipping sauces. It is thicker and sweeter than light soy sauce and is known for giving foods a rich brown glaze. Nutritionally, Dark Soy Sauce is used in small amounts but is very high in salt — 16g per 100g — so it contributes substantial sodium even from modest servings; it also contains some protein and trace B vitamins and minerals from fermented soy. Use sparingly to control sodium intake while still getting the characteristic color and umami. Although made from soy and fermentation which yield amino acids and several micronutrients, this condiment is best thought of as a flavoring rather than a primary nutrient source; choosing reduced-sodium varieties or alternatives can preserve flavor with less salt.
