Chili-Lime Vinaigrette is a tangy, bright dressing commonly used in Latin-inspired and fusion cuisines to dress salads, grilled vegetables and seafood; it combines lime juice, chiles, oil and seasonings for a spicy-citrus finish. Nutritionally it is energy-dense and fat-forward, providing 60g of fat per 100g, but much of that fat is from unsaturated sources and it also contributes vitamin K. While it brings flavor and healthy monounsaturated fats, it is low in fiber and protein and can be relatively high in salt, so using it in moderation or swapping to a lower-fat or yogurt-based version can make a meal more balanced.
