Cardoon Rennet is a traditional Mediterranean plant-derived coagulant made from the thistle Cardoon (Cynara cardunculus) and is often used as a vegetarian alternative to animal rennet in regional cheeses and some artisanal dairy preparations. It is surprisingly nutrient-dense for a coagulating agent and supplies 40g of fiber per 100g, along with useful amounts of minerals and vitamin K. In addition to its functional milk-coagulating enzymes, Cardoon Rennet contains some plant polyphenols with antioxidant properties and is generally regarded as a wholesome, minimally processed ingredient in traditional cooking and cheese-making.
