Shirataki (Konjac) Wide Noodles are translucent Japanese noodles made from the konjac (konnyaku) root, commonly used in Asian cuisines as a low-calorie substitute for wheat pasta or rice. They are exceptionally low in energy at 10kcal per 100g and are mostly water and the soluble fiber glucomannan, which gives them a slippery, chewy texture and can help with feelings of fullness. Nutritionally they provide very little protein or fat but contribute fermentable fiber and small amounts of minerals like calcium; because of their negligible calories and carbs, they’re often chosen for weight-management or low-carb cooking.
