Shortening

Shortening is a solid fat commonly used in baking and frying to create flaky pastries, tender cookies and crisp textures; it can be made from hydrogenated vegetable oils or other vegetable fats. Nutritionally, Shortening is almost entirely fat, containing 100g of fat per 100g, with virtually no protein, fiber or significant micronutrients. It is a highly processed ingredient and provides little in the way of vitamins or minerals, so it’s best used sparingly or swapped for oils higher in unsaturated fats when possible.
