Balsamic Reduction is a thick, sweet glaze made by gently reducing traditional balsamic vinegar until it concentrates into a syrupy sauce; it originates from Modena/Reggio Emilia in Italy and is commonly used to finish salads, roasted vegetables, grilled meats and even desserts. Nutritionally it is used in small amounts but is relatively concentrated in sugar — about 58g per 100g — and contains negligible protein, fiber or fat. While it adds intense flavor with relatively small portions, it should be used sparingly because of the added sugar; on the plus side, balsamic-based products retain some grape-derived polyphenols that contribute mild antioxidant benefits.
