It is a concentrated plant-protein ingredient, providing about 13g of protein per 100g and also supplying dietary fiber and some healthy fats from soy. As a fermented food it contributes savory umami flavor and bioactive compounds associated with fermentation, and it is a good source of plant-based protein and fiber — however, even reduced-salt doenjang can be fairly salty in concentrated use, so it’s best used sparingly as a flavoring.
