Glycerol (Glycerin) is a colorless, viscous sugar alcohol widely used as a humectant, sweetening agent and solvent in foods, pharmaceuticals and cosmetics rather than eaten as a standalone food. It appears in many processed baked goods, confectionery and low-moisture formulations to retain moisture and add sweetness without using table sugar. Nutritionally, glycerol provides mostly energy and little else — it contains about 100g of carbohydrate per 100g and provides calories but virtually no protein, fiber, fats or micronutrients. It’s not a source of vitamins or minerals and functions more as an additive than a nourishing ingredient. From a health perspective, glycerol is a highly processed ingredient that supplies calories with minimal nutritional benefit; for many home cooking uses, whole-food purées (applesauce, banana, date paste) can serve the same moisture-and-sweetness role while contributing fiber and micronutrients.
