Dried Tarhana

Dried Tarhana is a traditional dried soup mix from Turkey and surrounding regions, made by fermenting a mix of grain (usually wheat) and yogurt or milk, then drying and crumbling it into a powder that’s rehydrated into a comforting soup or porridge. It’s prized for its tangy, savory flavor and quick-cooking convenience in many Middle Eastern and Balkan cuisines. As a dried mix it’s carbohydrate-rich and provides some protein and fiber, and can also contribute minerals such as calcium. Because it’s a concentrated powdered product it can be relatively high in sodium — 4g per 100g — so it’s worth adjusting added salt when you prepare it. Tarhana also supplies a good-quality amino acid profile from the dairy and grain ingredients, making its protein relatively complete compared with many single-ingredient plant foods. While tarhana is a convenient, flavorful base for soups, it isn’t a significant source of antioxidant compounds, so pairing it with vegetables, legumes or herbs will boost its micronutrient and phytonutrient content for a more balanced meal.
