Güllaç Leaf is a very thin, sheeted pastry used in Turkish cuisine—most famously to make the milky dessert güllaç served during Ramadan—made from starches and baked into delicate leaves. Nutritionally it is mainly a refined carbohydrate: about 86g of carbohydrates per 100g, with very little fat or protein, so it contributes energy but not much satiety or micronutrients.
