Güllaç Sheets

Güllaç Sheet is a very thin, sheeted pastry used in Turkish cuisine—most famously to make the milky dessert güllaç served during Ramadan—made from starches and baked into delicate leaves. Nutritionally it is mainly a refined carbohydrate: about 86g of carbohydrates per 100g, with very little fat or protein, so it contributes energy but not much satiety or micronutrients. Because it’s essentially a refined pastry sheet, it’s not a significant source of fiber or protective plant compounds and is best used sparingly or paired with nutrient-rich fillings (milk, nuts, fruit) to boost protein, fiber and vitamins.
