Fermented Sweet Bean Paste is a sweet, fermented Chinese condiment made from fermented wheat and/or soy, widely used in Northern Chinese cooking and in dishes like Peking duck and stir-fries for its rich, caramel-like umami. It’s characteristically sweet and salty with a thick, paste-like texture. Nutritionally it’s used sparingly but can be high in sodium — it contains about 6g of salt per 100g — and also contributes sugars and some protein from the fermented beans. Because it’s a fermented product it can add depth of flavor without much fat. From a health perspective, Tianmianjiang is best treated as a flavoring rather than a significant source of nutrients: it provides modest protein quality but little fiber or antioxidant compounds, and its high salt content is the main consideration when using it regularly.
