Pixian Doubanjiang

Pixian Doubanjiang is a spicy, salty fermented paste made from broad (fava) beans and chilies, traditionally associated with Sichuan cuisine (notably Pixian) and used to add deep umami and heat to stir-fries, stews and marinades. As a concentrated condiment it delivers savory flavor rather than bulk nutrition, but it does contribute plant protein and fiber and can enhance the palatability of vegetable and legume dishes. It is relatively high in sodium (12g per 100g), so it’s usually used in small amounts; as a fermented product it also brings the characteristic savory fermentation notes and some beneficial fermentation-derived compounds.
