Asafoetida is a pungent resinous spice (also called hing or asafetida) obtained from Ferula plants and widely used in Indian and Middle Eastern cuisines as a savory, umami-rich seasoning or as an onion/garlic substitute. Because it is used in very small amounts, its flavor is the main reason for adding it rather than bulk nutrition. In concentrated form it contains notable minerals — for example it is unusually high in calcium (690mg per 100g) — but keep in mind typical culinary use is a pinch, so you get flavor more than a nutrient boost. It is prized for its ability to add depth to lentils, vegetable dishes and spice blends, and some of its sulfur-containing compounds are associated with the characteristic savory aroma and potential bioactive properties.
