Glucono Delta-Lactone (GDL) is a food-grade acidulant and coagulating agent commonly used in tofu production, some dairy and plant-based cheese making, and as a setting agent in certain baked goods and jellies. It is known for producing a gentle, controlled acidification and fast coagulation without imparting a strong flavor. Nutritionally, Glucono Delta-Lactone (GDL) contributes virtually no protein, fat or fiber and is essentially a carbohydrate powder with about 100g of carbohydrate per 100g, so it is used in very small amounts rather than as a source of nutrients. As an additive it is a highly processed ingredient (used for functionality rather than nutrition); when used sparingly in recipes it has negligible impact on overall diet quality, but it is not a nutrient-rich or whole food.
