Lye Water is a strongly alkaline, food-processing chemical (also sold as sodium hydroxide or caustic soda) used in small amounts in traditional preparations such as pretzel glazing, alkaline noodles, hominy/nixtamalization and some types of preserved foods; it is prized for changing texture, color and pH in recipes. Nutritionally it provides no energy or nutrients and is essentially inert as a food ingredient at typical culinary dilutions (0kcal per 100g).
