Dried Butterfly Pea Flower is the dried flower of Clitoria ternatea, a Southeast Asian herb commonly called butterfly pea or bunga telang; it’s used widely as a caffeine-free tea, a natural blue food dye and a floral ingredient in Southeast Asian and modern fusion cuisines. As a dried botanical it is unusually nutrient-dense for an herb, providing about 22g of protein per 100g and also a notable amount of fiber and trace minerals such as iron and manganese, while remaining very low in fat and salt. The flowers are prized for their anthocyanin pigments, which produce the vivid blue colour and act as antioxidant compounds, and they make a healthy, low-calorie infusion or colouring agent for drinks and desserts.
