Toasted Grated Coconut (Kerisik) is a toasted, grated coconut product used widely in Malay and Southeast Asian cooking to add a deep, nutty, caramelized flavor to curries, sauces and sambals. It’s commonly produced by toasting freshly grated coconut until golden and then grinding it into a paste or fine powder. Kerisik is prized for the rich aroma and mouthfeel it brings to dishes rather than for bulk nutrition.
Nutrition-wise, Toasted Grated Coconut (Kerisik) is energy-dense and fat-predominant: it contains 57g of saturated fat per 100g, and also provides substantial fiber and minerals such as manganese and magnesium. The fat is largely saturated coconut fat, while the fiber content makes it relatively filling for small amounts.
From a health perspective, it supplies useful dietary fiber and some minerals and has a good amino acid profile for a plant ingredient, but because of the high saturated fat content it’s best used sparingly as a flavoring or garnish rather than a main ingredient.
