Limewater (food-grade)

Limewater (food-grade) is a dilute solution of food-grade calcium hydroxide used in several cuisines as a processing aid — for example to firm fruits and vegetables, to make traditional alkaline preparations, or in nixtamal-style treatments. It is used sparingly rather than as an ingredient to eat on its own. Nutritionally it contributes almost no macronutrients but does provide a source of calcium at about 80mg per 100g. Because it is an alkaline, concentrated solutions are caustic; when used in food the product should be explicitly food-grade and rinsed or neutralized per recipe instructions, and it’s generally used only in small amounts rather than as a dietary calcium source.
