Kombu, Reconstituted (from Dried) is a rehydrated form of dried kelp commonly used in Japanese, Korean and other East Asian cuisines for broths, stocks (dashi) and as a savory seasoning. It is prized for its strong umami flavor and ability to add depth to soups and stews. Nutritionally it is low in calories and provides some fiber and plant protein, and is especially notable for its very high iodine content (2000µg of iodine per 100g), along with vitamin K and folate. Because of the concentrated iodine, it can be a valuable source of trace minerals but may be too high for people with thyroid conditions or those on strict low-iodine diets, so use it in moderation.
