Shrimp Paste

Shrimp Paste is a pungent, savory fermented condiment common across Southeast Asian cuisines (Thai, Malaysian, Indonesian and Vietnamese) made from salted, fermented shrimp. It’s prized for intense umami and is used in small amounts to season curries, sambals, dressings and dipping sauces. Nutritionally it is a concentrated source of protein and minerals — many traditional shrimp pastes are notably high in calcium and iodine — but it is also very high in sodium, providing about 20g of salt per 100 g, so it’s used sparingly in cooking. Because it’s made from whole shrimp and fermentation concentrates nutrients, it supplies well-balanced amino acids and important trace minerals while acting as a powerful flavor enhancer; swapping to lower-sodium fermented condiments can keep the taste while reducing salt intake.
